The naturally occurring carbon dioxide, retained during the fermentation process, gives it a lively effervescence, while its delicate aromas and silky texture give way to a fresh and dry finish.
An elegant aroma with notes of white peach, mandarin, banana, pear, lychee, currant, and a hint of marshmallow.
On the palate, it has a pleasant, natural and delicate carbonation. Reminiscent of young wine, it has a slight minerality, followed by a soft sweetness of ripe stone fruits with round rice notes and umami. A slightly peppery spice lingers on the palate, with a long finish.
Beautiful balance with a lovely subtle acidity. Pure and clean finish.
This sake is best enjoyed with white fish carpaccio, tempura, and crab dishes.
