Where does nori grow?
Saga Bay, in the Ariake Sea, is the iconic region for nori cultivation, a seaweed widely used in Japanese cuisine. This area accounts for 20% of Japan’s production, or even 40% when including Fukuoka, Kumamoto, and Nagasaki. Saga Bay is surrounded by mountains, whose sediments and rivers flow into the sea. This mineral-rich environment gave rise to nori farming in the early 20th century.
What does nori taste like?
When eaten fresh, right after harvesting, seaweed sheets offer a very pleasant, light salinity that is never overpowering. The unique interplay of fresh water currents from the surrounding mountains and the saline marine currents imparts the characteristic vegetal notes to the renowned Saga nori. Its taste is long-lasting, pleasant, and refreshing. To make dried nori, fishermen mince and chop the fresh nori before mixing it with fresh water.
