Japanese sesame in a nutshell :
Sesame (goma) is an annual plant in the Pedaliaceae family. It is thought to have been first cultivated in India around 3500 BC. Its seeds are mainly used as an ingredient in food products and oils, and are an essential part of Japanese cuisine. Sesame is classified according to the colour of its outer shell: white sesame, black sesame and yellow sesame (or golden sesame). White sesame has a mild flavour, black sesame has a strong aroma and yellow sesame is fragrant and rich in flavour.
Sesame, a condiment loved by Japanese and Westerners alike, is found in oils, sesame pastes, sauces, furikake, vinaigrettes, etc.
