Our artisan distiller, Fukano Shuzo, founded in 1823, is a distillery that follows both tradition and innovation in the production of “Kuma” Geographical Indication shochu.
The distillery operates two breweries, one using traditional clay jars for manual shochu production and the other using machines for temperature control. This dual approach allows Fukano to preserve the 200-year-old tradition of Kuma shochu while developing new varieties to suit diverse preferences.
Entirely handmade, fermented in clay jars since the end of the Edo period and obtained by vacuum distillation, this shochu is aged for at least 10 years in oak barrels. This vintage shochu, distilled in a special atmosphere similar to that of whisky, reflects the brewery's passion and the uncompromising dedication of its artisans.
Its aromatic notes evoke nuts and caramel.
It is distinguished by a traditional sweet taste on the attack, followed by a robust finish.
This shochu can be enjoyed chilled (+15°C) or hot at +60°C.
It can be mixed with water for a smoother taste.
The color is slightly amber.
The palate is smooth and rich. There are slightly woody notes of oak, with hints of vanilla and caramel.
This shochu can be enjoyed neat, after a meal, on ice or at room temperature, or diluted with 1/3 very cold water to accompany grilled beef, hard cheeses (Comté, Parmesan, Mimolette) or even a good chocolate dessert.
