Yamatsuru Choki Chozo Sake lees Shōchū

This Shōchū is made from the lees of junmai shu, junmai ginjo and junmai daiginjo sake from Nakamoto Brewery and obtained by vacuum distillation.
It is aged in oak barrels for seven years and is an exquisite combination of rice aroma and oak aroma.

This Shōchū , with its slightly cloudy clarity, slow, numerous and regular tears, green reflections and pale straw yellow color, offers intense, graceful aromatic notes of apricot, pineapple, lemon, mango, pear, green apple, rice pudding, yogurt, mushroom, passion fruit, exotic fruits.
The palate is balanced, medium acidity, low bitterness, medium umami, strong body, intense flavors, fruity, floral, traditional, aged. Lots of length in the mouth.
Our perfect pairings : Definitely a Shōchū to enjoy in cocktails, or dry, or on a big ice cube or with country sausages, fish carpaccio, smoked sardines, a good ajillo, nuts and other dried fruits, bacon...

NAKAMOTO Nakamoto Sake Brewery is located at the foot of Mount Ikoma, between Nara and Osaka. Its history dates back to the 12th year of Kyoho (1727, Edo Era).
Its aim has always been to produce handcrafted sake that can be consumed at the table, as an accompaniment to food, like a wine. To this end, the sake is made exclusively from pure rice, without the addition of distilled alcohol or antioxidants, and with attention to the quality of the water and rice.
The brewery is committed to using the latest technology while respecting traditional craftsmanship. One of the new technologies used, the most advanced in the world, is a water activator.
By adding energy to the water, micro-organisms such as koji (malted rice) and yeast become more active and the sake becomes even more delicious.
