Did you know that there are only 400 rice vinegar producers in Japan, and an even smaller number who still make vinegar in a traditional way? These producers make the nihonshu (saké) that is used to make the vinegar themselves. They cannot under any circumstances sell their nihonshu so as not to compete with specialist producers.
Japan produces a huge range of vinegars: apple, sushi, sakura flower, yuzu, sudachi, shiso, dried bonito, jabara vinegars….

Not all rice vinegars are created equal
Large-scale producers use an average of only 40 g of rice per liter of vinegar, prioritizing productivity over flavor. These bland products are primarily designed to meet the needs of mass retailers and the food industry.
In contrast, artisans use between 120 and 160 g of rice to produce one liter of Japanese vinegar, ensuring significantly higher quality. Among them, one name stands out: LIO JYOZO, a family-run business in Miyazu, Kyoto Prefecture, that has been crafting the world's finest rice vinegar for four generations.

LIO JYOZO: a legendary name
Since 1893, LIO JYOZO has preserved its unique expertise in crafting exceptional vinegars and sake. Their distinctiveness lies in their complete control over the production process—from pesticide-free rice cultivation in the Tango and Kyoto mountains to the final vinegar product.
Sustainable Cultivation: Their rice is grown in terraces (Tanada method) at over 500 meters above sea level. For over 50 years, no pesticides have been used, and since 2001, the crops have been entirely clean. However, this tradition faces challenges due to the aging farmer population and a lack of interest among younger generations.
Artisanal Process: LIO JYOZO crafts its own rice malt, a key ingredient in sake brewing, and uses a traditional static fermentation method. The vinegar ferments slowly for 80 to 120 days and is then matured for at least 8 months. This meticulous process ensures a vinegar that is mild, aromatic, and rich in umami.
