This is a black brown rice vinegar made exclusively from Japanese brown rice. It is made using traditional static surface fermentation method, which slowly ferments acetic acid over time, then matured in cedar vats to create a pure black brown rice vinegar rich in amino acids.
Aging of brown rice vinegar in cedar wood casks creates a harmony of sweet sour and woody fragrance. This vinegar, diluted in water, combined with honey, makes a healthy and refreshing drink. This black whole-grain rice vinegar is a perfect seasoning for gyoza and is ideal for pork in sweet-and-sour sauce.
You can also dilute it with soda or milk. It blends well with sweet and savory cuisines, incensing tastes and flavors. Also ideal for grilled fish, salads and other raw vegetables.
