Ginjo rice vinegar is a rice vinegar fermented by adding alcohol using surface fermentation method. It's easy to mix and brings less specific rice odor and a slight acidity. Rice vinegar generally has a pronounced aroma and taste.
Ginjo rice vinegar is suitable for marinated dishes and Awase-su for sushi rice.
This vinegar is suitable for vinegared fish, for awase-su (a mixture of vinegar and other flavors such as soy sauce, sugar) used for SHARI (sushi rice), for vinegared dishes such as seaweed (mozuku, mekabu, funori...) or GARI pickled ginger.
