Steamed Beni-Haruka sweet potato paste
Ref : NISKA2
Sweet potatoes are rich in dietary fiber. When you cut sweet potatoes, milky white liquid that runs off the surface is called “Yarapin”(latex). Contained only in sweet potatoes, it protects mucous membrane of the stomach and ensures smooth intestinal transit.
This “Yarapin” is found in abundance, especially in sweet potatoes skin. Because color darkens or texture becomes bad, many companies and families remove skin and throw it away. Wild animals, who know what they need for their bodies, eat skin. It's us humans who throw away this high-quality, nutritious skin, wasting time and money on its appearance. Throwing away such precious things is not good for the body or earth.
At our artisan Kairen, located in the south of Kyushu island, sweet potato is used in its entirety to make this paste, not only flesh, but also nutritious skin. Sweet potatoes are highly capable of absorbing sunlight, grow durably even in volcanic ash, and are resistant to typhoons. They are the crop best suited to the climate of southern Kyushu.
They are rich in nutritional value and are also known as an excellent healthy food ingredient containing plenty of carbohydrates, starch, minerals, vitamins and dietary fiber. Sweet potatoes are rich in vegetable fiber, which also helps relieve constipation. Vegetables and fruit are said to contain an abundance of nutrients between their skin and flesh.
Sweet potatoes are also known for many other wonderful nutrients contained in the skin. Skin also contains enzymes that break down starch, improve digestion and prevent gas.
Sweet potato nutrients are considerable (per 100g): Dietary fiber 3.8g Carotene 27μg Vitamin E 1.5mg Vitamin B1 0.1mg Vitamin B2 0.03mg Vitamin B6 0. 23mg Folic acid 46μg Niacin 0,7mg Pantothenic acid 0,97mg Vitamin C 20mg Sodium 4mg Potassium 490mg Calcium 47mg Magnesium 19mg Phosphorus 42mg Iron 0,6mg Zinc 0,2mg Copper 0,17mg Manganese 0,5mg Sweet potatoes are high in potassium, calcium and vitamins.
They are also called quasi-complete foods because of their good nutritional balance. As they contain an abundance of dietary fiber, they help prevent and relieve constipation. Starch, main ingredient, protects vitamin C abundance contained in sweet potatoes, preventing vitamin C depletion due to cooking.
Sweet potatoes contain many active ingredients: 1.
- Suppression of cholesterol and lipid absorption, reduction of blood cholesterol by promoting excretion. 2.
- Prevent diabetes by delaying sugar absorption. 3.
- Prevents overeating by increasing chewing frequency and stomach volume. 4.
- Prevention of colorectal cancer, etc. by balancing intestinal bacteria, activating intestinal functions and improving intestinal transit.
At Kairen, sweet potatoes are refined for 100 days after harvest. This helps raise their sugar content. No sugar, additives or colorants are used. Only the Beni-Haruka variety from Kagoshima is used.
Elements that characterize steamed Beni-Haruka sweet potato paste are as follows:
・Smooth texture: steaming softens the sweet potato fibers, giving it a creamy texture. This characteristic also makes it an ideal ingredient for sauces and purées.
・Preservation of natural flavor: steaming preserves the flavor of the sweet potato and brings out the ingredient's natural taste.
・A versatile ingredient: It can be used as an ingredient in soups, dips and baked goods, allowing for creativity.
