Dobin mushi service consists of four parts: the teapot in which ingredients are placed, a saucer, a lid for the teapot and a small “choko” cup on top. It is from this cup that tasty broth produced during steaming is drunk.
Dobin (“teapot”) mushi (“steamed”) is broth steamed in a small teapot. Each teapot contains an individual portion of broth. Dashi-based broth is delicate, and soup contains thin slices of mushroom or scallop, or chicken, shrimp or fish… Named after the teapot-shaped container, dobin mushi cooks the ingredients by poaching them while trapping their aromatic vapors in the teapot.
Intensely flavored broth produced during cooking is poured into small “choko” cups, which are eaten with the bites.
Dobin Mushi allows autumn mushrooms and shellfish to take center stage. Once all ingredients have been placed in the teapot, it is placed on a heated grid or on a rack in a wok with water at the bottom and steamed.
To serve, each individual teapot is presented on a saucer with half a fruit (yuzu or sudachi or lime or lemon) on top. Soup is poured into the small cup, and ingredients are removed from teapot with chopsticks and placed in the cup. The citrus fruit is gradually squeezed into sake cup.
Ingredients and broth are consumed alternately. Best part of steaming DOBIN is the delicious broth. When savory ingredients such as mushrooms are poached in DOBIN, their umami and flavor dissolve in broth, creating a very elegant and flavorful soup.
Pour dashi into a small cup and you'll be surprised by its delicate flavor! Dobin mushi broth base is a mixture of sake-based dashi, kombu and clams, followed by dried bonito flakes. Proportions vary according to ingredients, so it's best to taste the broth.
For the broth, we recommend using salt, white soy sauce (1 scoop) and red aka-zake sake (2 scoops) for seasoning. The rest is obtained by steaming isaki, shiitake mushrooms and grilled clams in a DOBIN.
