Sensai Aiyama Junmai Ginjo sake

This sake has a subtle, elegant aroma reminiscent of pine needles.
It is a dry sake with a slight bitterness, juicy acidity with the added umami of the rice, and a complex and refreshing aftertaste reminiscent of Chartreuse.
You will like the notes of mushroom, pine sap, small peppery, spicy touches, with a slight astringency on the finish.
This sake is brewed from the Aiyama rice variety, which was created in 1941 at the sake rice test site of the Hyogo Prefectural Agricultural Experiment Station. Its main production area is Hyogo Prefecture, where it originated.
As it is a difficult variety to grow, it is a rare variety that is not often grown elsewhere.
This rice trades at a high price among sake rice varieties and is also known as the "diamond of sake rice". With a high white core expression and good water absorption, Aiyama dissolves easily in the mash. This characteristic, combined with rice flavor and sweetness, results in a sake with a rich and mellow flavor.
