Neriume Organic Umeboshi Plum Paste 120g

Umeboshi is Japanese apricot tree fruit, treated in salt brine to make it edible, as it is not consumable when fresh. Ume means “plum” and boshi means “dried.”
Salt slows down the aging process and naturally preserves the fruit. The Japanese attribute medicinal properties to it, particularly that of strengthening the immune system.
Its high citric acid content aids digestion and stimulates the liver to create a detoxifying effect on the body.
Some like to say that samurai always carried it with them during periods of combat to cure illnesses... Umeboshi has a very fruity aroma.
On the palate, due to its high citric acid content, it has a very sour, almost pungent taste and is traditionally very salty.
The version we offer is made exclusively from organic fruit grown in Gunma Prefecture and salt.
Gunma Prefecture is the second largest ume-producing region in Japan, with the second largest ume harvest.
Our artisan, Yuasa Farm, has been producing ume at the foot of Mount Haruna in Takasaki City, Gunma Prefecture, for over 100 years, since the 1900s.
Less than 1% of umeboshi in Japan is certified organic and processed organically.
This neriume paste is made by simply removing the pit from salt-cured ume plums. It is ideal for adding flavor to vinaigrettes, mayonnaise, vegetable and seafood marinades, or for seasoning natto (fermented soybeans), tofu, fried foods, grilled meat and fish, gyozas, meat and fish tartares, udon noodles, nabe-style stews, and cucumber maki. In Japan, this paste is a vegan alternative to anchovies.
