In Kagami area, Ryuo city, Shiga Prefecture (which praises Lake Biwa), farmers have inherited, from generation to generation, a rich agricultural heritage that benefits from moutains pure spring water.
Our farmer, Yasunori WAKAI, represents the 16th generation (since 1613) of his family to grow rice in purest respect for tradition, on 32 hectares in Shiga Prefecture. Kiramizuki's rice has reached 5-star mastery level, highest level of mastery in Japan and the world.
"Nihon" means Japan and "Bare" refers to the sunny, clear sky. This pesticide-free rice has been a Wakai Noen classic since the 1970s. 50 years ago, it was the standard rice in Japan.
This was the first variety to be bred using accelerated method. Today, however, this variety is hardly ever grown, as it is less resistant to heat. During harvest period, rice fields display magnificent colors. This rice is still used today to make sake.
Grains are small, less mellow and less sweet than koshihikari. Its light taste and good firmness make it ideal for making vinegared rice. This rice is very popular with sushi restaurants.
