Ponzu soy sauce is a traditional Japanese seasoning that combines soy sauce and citrus juice.
One of the hallmarks of ponzu from artisan Goto Shoyu is that it is made entirely without additives such as chemical seasonings, preservatives, colorings, sweeteners or artificial flavors.
For this ponzu, manufacturer has sought the perfect balance between aroma, acidity and flavor.
The base of this ponzu balances fresh aroma and fruity acidity, using lots of natural citrus juice.
The whole is enhanced with dashi, an asset for umami. Dashi broths are carefully prepared overnight, bringing out the natural flavors of kombu, spring onion, shiitake and enoki mushrooms.
It's precisely because several dashis are used that this ponzu presents a combination of mild, natural flavors that blend beautifully, without the need for additives.
Around 25% of the product is yuzu juice, which contains many nutrients such as vitamin C and citric acid. Enjoy its elegant, aromatic acidity. This ponzu can be used as a sauce for broth fondues (Nabe) without dilution or as an accompaniment to meat or fish dumplings, fried chicken Karaage, salads, etc.
