The second pasteurization is done by hand, bottle by bottle.
The sake is ripened at extremely low temperatures to balance flavors and maintain quality.
This sake is fresh and vibrant, with opulent aromas, a refreshing scent, fruity flavors of green apple, pear, lemon, a slight minerality, a dry finish, an elegant acidity.
It should be noted that the umami of this sake becomes more expressive after 2 to 3 days of opening, kept in a cool place.
