Shochu SOBA JIHEI 10 years old
Ref : NISSMA2
Founded in 1804, Matsushita Jozo Co. is some of Kuma Shochu's iconic brands’ ( Saikogura and Sakura no Sato) originator. Located in Mizukami village, near Kuma River source, one of the three fastest-flowing rivers in Japan, it has been making shochu for over 200 years and is the oldest distillery among Kuma Shochu guilds.
This shochu is vacuum distilled to produce light, subtle flavors. As alcoholic beverages consumption, particularly shochu, takes place mainly during meals, vacuum distillation allows to obtain simpler flavors. This buckwheat shochu, matured for 10 long years, is quite simply remarkable. Aromas are sweet, evoking ripe and exotic fruits.
After a decade of aging, it offers a deep flavor. Its sweetness is perceptible and its texture velvety. Palate is suave, with buckwheat, cereal notes, hints of fermentation and sweetness. You'll appreciate powerful buckwheat or buckwheat dashi notes, with accents of bread and toast. Our recommended accompaniments: marinated and grilled pork loin, buckwheat pancakes, fried eggs, soba, chocolate tartlet.
How to enjoy your shochu :
- Pure: savor the flavor slowly with a small amount of shochu in your mouth.
- On the rocks: place ice cubes in a glass and slowly pour shochu over them to enjoy full flavor. You can add lemon slices.
- Mizu-wari, i.e. cut with water and ice cubes: Put water (preferably fresh water) in a glass and pour shochu into it. Feel free to use whatever ratio of shochu to water you prefer.
- Oyu-wari, i.e. cut with hot water: prefer water at 50°C-60°C; it's essential to pour shochu into the cup first, then cover it with hot water to enjoy all flavors.
