      White bean paste, or shiroan, is mainly used as a filling for sweet desserts and pastries in Japanese and East Asian cuisines. It has a milder bean flavor than red bean paste.

      Shiroan is a creamy, sweet white paste called an or anko. It is made from lima beans or butter beans, or shiro ingen mame in Japanese. The beans are shelled, simmered until tender, drained, and then mashed before adding sugar to sweeten the paste.

      It is possible to make shiroan paste with a small amount of sugar, but reducing the sugar significantly will result in a paste that is not moist enough and will change in texture. Sugar is necessary for preserving the bean paste, but if you plan to consume it quickly, you can omit it.

      Traditional recipes typically call for ⅔ to 1 part sugar to 1 part dried beans (in some cases, more than one part). You can substitute the sugar with a healthier alternative, such as maple syrup or honey, but the paste will be more liquid and the taste may be too strong.

      We recommend adding a little salt to shiroan paste. Adding salt makes it taste sweeter and brings out the flavors.

      White bean paste can be flavored:

      • Sakura An – 100 g white bean paste + 5 g salted cherry blossoms • Miso An – 100 g white bean paste + 10 g sweet saikyo miso

      • Kabocha An – 100 g white bean paste + 100 g kabocha (pumpkin/squash) purée

      • Kimi An – 150 g white bean paste + 1 egg yolk • Yuzu An – white bean paste + yuzu zest or powdered yuzu juice

      • Kurumi An – white bean paste + chopped walnuts • Goma An – white bean paste + black sesame paste

      How much water should I add when rehydrating? When using Anko powder, if you use 100 g of Anko powder, add 100 g of water. Once rehydrated, if I want to add sugar, how much should I add? If you use sugar, ideally stick to the following ratios: 100 g of shiroan powder, 100 g of sugar, 100 g of water. Put all the ingredients in a saucepan, mix together and heat over medium heat. The mixture will gradually thicken, depending on the heat. Do not turn off the heat while it is simmering. Cooking is complete when the consistency is to your liking. This powder allows you to make mochi and other daifuku with a white bean paste that has the right texture and sweetness for your recipes. It is a great alternative to ready-made pastes, which are often much too sweet.
