Takenoko bamboo shoot sauce

In early spring, as cold temperature persists, bamboo shoots begin to emerge from the magnificent bamboo grove in the Ouma mountains, Kokuraminami region (northern Kyushu Island), with signs of spring.
Ouma bamboo shoots are carefully cultivated in pure natural water and mineral-rich red soil, so that they are very mild and can be eaten raw, like sashimi.
Bamboo shoots are coarsely chopped for texture, then combined with Fukuoka soy sauce to create an Asian-style dressing with fragrant sesame oil. You'll appreciate the powerful, round, almost biscuity aromas of cooked, even meaty vegetables, with a hint of smoke.
We like the lovely sweetness, tangy notes, roundness and softness, flavors of sesame and roasted spring onion. This sauce goes well with mixed salads, poke bowls, avocado, sea salads (shrimp, mussels, cockles), beef or salmon tataki, scallop carpaccios, somens...
