Sake Toyonoum Junmai Ginjo 16%

This Junmai Ginjo sake is made from Matsuyama rice Mii d'Ehime, a sake rice not suitable for mixing sake, but whose koji is easy to produce and perfectly suited to the low fermentation of ginjo.
It is 50% polished and brewed with Kochi AC95 yeast. This sake offers a pronounced and fragrant aroma, fruity, with notes of melon, pomelo, honey, white miso.
The palate and finish are structured, semi-dry and clean, with mineral character. The fruity flavours dominate on pronounced and spicy notes then accents of apple, ripe banana, bread
