Sauce Zeitaku Amadare

Sweet soy sauces, as they exist in Europe, don't exist in Japan. Kyushu island, and more specifically Fukuoka and Kumamoto prefectures, have a version with a slightly sweet flavor, much appreciated by Westerners.
Japanese sweet sauces, made with soy sauce, are topping sauces. Zeitaku Amadare sauce is a sweet sauce rich in hon' kuzu starch (pueraria lobata starch) from Yoshino craftsman, Nara prefecture. It's refreshingly mild, and has nothing to do with chemical seasonings.
Our artisan uses it in his restaurant to coat anago conger eel and unagi lacquered eel. However, it can also be used in many other dishes at home.
For example, it goes perfectly with teriyaki chicken or barbecued mochi rice dumplings. Here's an easy recipe for seasoning your yaki onigiri: * shape your onigiri into a triangle * lightly oil a non-stick frying pan and lightly pan-fry.
This allows the water contained in the onigiri to evaporate and not deform. * When the surface of the onigiri is golden and crisp, brush on the sauce. After applying the sauce, it tends to burn easily, so turn it over before it burns. * Add more sauce and turn over to cook and enjoy.
