Wakayama Ume Plum Syrup

The farm ITO NOEN was created about 120 years ago, in the middle of the Meiji era. Since its creation, it has been famous for its mikan mandarin crops and 15 other citrus fruits with exceptional perfumes and flavors.
Ito Noen is also famous for its products made without additives or dyes or preservatives and for the fine with the fruit of the Wakayama Prefecture.
One of these fruits is the ume plum. The ume (of the genus Prunus) is commonly called "plum", but it is actually more closely related to the apricot.

While other fruits become sweeter as they ripen, the acidity of the UME, in particular its citric acid content, increases. This acidity is at the origin of many benefits of the EME for health and allows to preserve the volatile compounds that give the EMU its complex flavor.
The ume is not consumed raw because much too acidic. It is very rich in essential vitamins and minerals, antioxidants and polyphenols.
The variety "Nanko", is considered one of the ume types of the highest quality. It usually bigger than other types of umes and can reach 5 centimeters in diameter. It is harvested mainly in the Wakayama Prefecture. Once the nanko-ume harvested in May and June, they are transformed into a variety of delicious products, including ume syrup, umeshu, ume juice, ume juice and, of course, umeboshi.
The ITO Noen Wakayama Ume Pull Syrup is a luxurious syrup made only from really delicious ingredients.
It is a simple and soft flavor syrup, slowly refined with Nanko ume wakayama and black raw cane sugar. This syrup is full of the delicious flavor of plums. Its only ingredients are Kishu Nanko plums (Kishu is the former name of wakayama) and refined crude sugar. No chemical additive is used, allowing you to savor the natural flavor and taste of plums. This plum syrup offers a perfect balance between the acidity of nanko plums and the refined sweetness of crude sugar.
The syrup is elaborated from plums of the highest quality and a large amount of coarse refined sugar, a nutrient from Tanegashima, in the Kagoshima prefecture. This sugar, from the sugar cane, contains a large amount of minerals, lost when refining white sugar and other sugars. Its natural yellow-brown color confers in the plum syrup of ITO Farm an intense color. This luxurious plum syrup is elaborated only from high quality plums and a coarse, unctuous and rich refined sugar.
Wakayama is an important producer of Ume plums. About 60% of the national harvest comes from Wakayama Prefecture, where Nanko plums are produced, the flagship brand of the region. Originating from MINABE, in the Wakayama Prefecture, Nanko plums are characterized by their big fruits, their little nuclei and their thick, tender and juicy flesh. Nanko plums produced in Wakayama have a tasty taste and flavor, as well as a tender flesh, and are considered a luxury product.
This syrup is ideally tailored in support of a very fresh or frozen spring water or sparkling water. It is very much appreciated by cocktail bars and bars as well as tea rooms and pastry chefs.
