Zuiyo Junmai Daiginjo Gin sake is made from Yamada Nishiki, one of the most prized sake rices, polished to 48%. It is abundant in umami with elegant aromas. This exquisite sake, with its powerful umami, offers a rich, aromatic, floral, fruity bouquet, evoking green apple, pear, melon, yellow peach and mango.
The luxurious, long-lasting, almost saline and iodized flavors combine freshness, bitterness, acidity and complexity. We love the fresh notes of cereal, fresh almond, sourdough and kiwi. This relevant sake, long on the palate and not very sweet, expresses rice notes well.
Tasting-wise, this sake is particularly well-suited to sushi, sashimi, steamed vegetables, light dishes such as white fish, steamed chicken, salad, etc.
Zuiyo Co. was founded in 1867 in Kawashiri, a town that flourished during Hosokawa reign as a collection and storage center for rice harvests. Zuiyo was the first brewery to switch from akazake, the only alcohol made in Kumamoto at the time, to sake.
Kumamoto Prefectural Sake Institute was founded here in 1909 to improve sake brewing techniques in Kumamoto (it was later moved to Shimasaki, Chuo-ku, Kumamoto City in 1922), making Zuiyo a very important player in Kumamoto's sake history.
This very interesting sake is perfectly suited to French cuisine.
