Whenever Sakura cherry tree is in bloom, its leaves exude a delicious fragrance. This edible leaf develops a powerful aroma very similar to that of the cherry blossom. Our craftsman rigorously selects the best leaves and soaks them in salt brine to preserve their color, fragrance and flavor.
Three months later, leaves are desalted and immersed in liquid cane sugar. They are then sterilized and packaged. Pastry chefs love them for making mochi, various creams and other sweet infusions.
Caterers, chefs and bartenders also use them in a variety of ways. Purists claim that these sweet leaves reveal aromas akin to those of the tonka bean.
