Doubanjiang or tobanjiang is a spicy condiment made from fermented soybean paste and chili pepper. It forms the backbone of many Chinese dishes.
It is widely used in Sichuan cuisine. Doubanjiang is reputed to be packed with umami (savory) flavors. Fermentation creates a complex taste, both salty and earthy, which adds depth to any recipe containing it.
Our artisan has created his miso in the Doubanjiang style, with the aim of achieving rich, concentrated umami flavours. This miso is home-brewed without any additives and combines three attention-grabbing keywords "healthy, safe and natural".
