Tonkatsu has been a popular Japanese specialty since 1899!
It is a thin slice of pork loin, very tender, breaded and fried until it reaches a perfect crispiness.
The word Ton comes from "pig" and Katsu is short for Katsuretsu, derived from the English word "cutlet".
Tonkatsu is always enjoyed with at least freshly grated white cabbage and its famous tonkatsu sauce, tangy, sweet and sour, with rich spicy flavors.
For this sauce, you will appreciate the creamy texture, the creaminess, the sweetness, the notes of reduced fruits and vegetables, the vinegary accents, the meaty and slightly smoky touches.
