Sugi Ita cedar wood sheets for cooking
Ref : NISKAT1
Japanese cedar wood sheets are widely used in Japanese cuisine, particularly for cooking mackerel, red mullet, sea bass or duck on small barbecues.
Usually the fish or meat are marinated with miso for example and then wrapped in this cedar sheet, like in a pouch and slightly moistened.
Our perfect combination : ideally it should be left to rest in a cool place before cooking on a barbecue or with a blowtorch. The cedar sheet releases its fragrances and delicately perfumes the food. For an aromatic variant, you can moisten the leaf with sake or a strong alcohol.
