In Japan, gyoza are traditionally dumplings of minced pork with nira chives, green onion, cabbage, ginger, garlic, soy sauce and sesame oil, then wrapped in a thin dough, steamed and grilled on a griddle.
These little ravioli are eaten with a specific sauce, tasty, tangy, slightly sweet, with a hint of spice.
This sauce base must include soy sauce, sugar and vinegar.
Tangy notes are very important for freshness and lightness. Rich in yuzu juice (25%), this sauce is a must for the most demanding palates.
