Here is a Shōchū produced like a Ginjo sake, from barley polished to 50%.

Distillation is done for two thirds under vacuum and for one third by atmospheric pressure.
A lot of aromatic richness for this light and elegant Shōchū which exhales notes of caramel, milk jam, roasted cereals, popcorn, cookie, tobacco, coffee, vanilla.
Taste is light and mellow with accents of caramel, dulce de leche, coffee, ovomaltine, chicory, toasted cereals.
