Professional Oroshiki Wasabi graters

Oroshiki is a shark-skin Wasabi grater.
More precisely, it is a "dasyatis akajei" ray skin (shark family). This utensil is traditionally used to grate fresh wasabi root. You will be surprised when using it as a zester.
Shark skin is very rough, and when you rub a fresh citrus fruit (orange, lemon, lime) or a hard fresh vegetable (carrot, beetroot, celery) on this grater, you get a very homogeneous paste, not granular at all.
Only the zest remains on the grater because the shark skin slides on the white part and thus preserves the peel of its bitterness.
You will use a small toothbrush or a small stiff bristle brush to remove the remaining material from the grater.
The version proposed here is an artisanal version of very high quality. The body is made of precious Hinoki cedar. The shark skin is studded. The utensil presented here is a real Oroshiki of the same construction as those used by the Sushi Masters.
