Shamoji - spatula for hangiri bucket

Shamoji is the Japanese spatula used especially for brewing and serving japanse rice or brewing sushi vinegar with rice.
The shamoji is often soaked in water during use to prevent the rice from sticking to it. Some expensive plastic shamoji have nonstick surfaces. Metal is rarely used because it is more likely to cut rice kernels or damage the hangiri wood vat traditionally used for mixing.
