Common Grade Kampot whole red pepper
Ref : CDPFAR10XL
A reddish-brown pepper with very warm, powerful notes. A bewitching pepper of rare elegance, with notes of warm bread and pastry, spices, citrus and pineapple.
Our perfect matches: use with chicken and white meats in general, soups, stews, marrow bones, kidneys, lamb, cooked salads and anchovies. In fact, it can easily be substituted for black pepper.
Cambodian pepper, from the Kampot region, had a great reputation before the Khmer Rouge ravaged the country. A few years ago, in 2004, a Frenchman decided to bring together the farmers who owned a few pepper plants in order to relaunch production in this region.
He opted for high-quality production, with numerous selective sortings on the plant, after harvesting, before drying and after drying. The exemplary work he carries out with the producers means that today we can offer one of the best peppers in the world.
Despite the extremely high general quality of the peppers from this area, the even stricter sorting we require, bead by bead, means that we can only obtain a few exceptional beans per harvest. Not a single gram of pesticide or chemical fertiliser is used. Everything is natural. The fertiliser used is a mixture of rice crabs and grasses.
New soil is regularly added and watering is done by hand, with enormous effort. To do such hard work, you have to be passionately in love with your land and your product.
