Its fragrant components, such as limonene, are reputed to have an excellent relaxing effect. Our artisan, Kagura No Sato, produces his juice exclusively from fruit grown using natural methods for over fifty years, and recently certified organic, and harvested in Shiromi, a small village surrounded by mountains rising to 1,000 metres above sea level.

Thanks to the moderate sunshine on the cultivation terraces, abundant alluvial waters of the steep, rocky mountains, and thermal amplitudes between nights and days, these yuzus develop refreshing aromas and intense tangy flavours.

Japanese people generally refer to the juice, or yuzu vinegar, as "yuzusu". This is due to its powerful acidic notes. It is used as a condiment for grilled fish, vinaigrettes, broths, or to flavor ponzu and other soy sauce-based preparations. This juice will delight cocktail lovers, ice-cream makers, chocolate makers and pastry chefs (charlotte, curd, sabayons, custards...).
