This grater is ideal for wasabi, it can also be used for ginger, white radish daïkon, black radish, carrots, citrus fruits (orange, lemon, lime, grapefruit, yuzu)...
It is specifically designed to remove only the zest of citrus fruits without touching the albedo and therefore avoiding all bitterness.
To make this tool even more helpful and take off the grated material more easily, use the bamboo brush raclette.
In that case, use the brush from top to bottom and not horizontally.
