Abukuma Foods is located in the heart of one of Japan's most famous peach-growing regions: Fukushima.
Following the events at Fukushima, during the Tohoku earthquake and subsequent tsunami, although far from concerned areas, peach production in this region undergoes monthly radioactivity checks to confirm their safety.
In the past, peaches that were too small were simply thrown away, as consumers demanded only beautiful fruit.
Four varieties have been selected to produce peaches for condiment or syrup:
"Akatsuki", "Hakuhou", "Natsukko" and "Madoka".
These small peaches go through a unique manufacturing process, allowing whole fruit to be tasted, including the pit, which takes on same texture as flesh.
Mini baby peaches are bright green in color, as they are harvested while still young on the tree, from late May to early June, shortly after fruit set. By cooking them in syrup according to a patented recipe, our artisan has succeeded in preserving baby peach's fresh green color even when exposed to air or heat. Baby peach" is a luxurious green ingredient that can be used in any recipe.
Another attractive factor is its small size and round shape, making it ideal for a variety of dishes. Baby peaches pits are very tender and therefore easy to eat.
Baby peaches' juicy nectar flows from the pleasantly soft flesh with every bite. Its fresh, delicate sweetness is something unique not found in ordinary fruit. Baby Pêche is a perfect ingredient for pastries, breads, ice creams, cocktails and other sweet or savoury preparations.
It's important to note no colorants or preservatives are used in their preparation.
These little peaches are highly prized by Japan's top chefs, patissiers and cocktail bars.
