Soba are noodles made from buckwheat flour, about as thick as spaghetti. Highest-quality soba noodles are made with 80% buckwheat flour and 20% wheat flour. Made with 1200% buckwheat flour, they are more brittle when cooked.
Soba can be eaten hot or cold. Soba noodles have been part of traditional Japanese cuisine since the Edo era (1603 to 1868). In those days, soba was eaten at the end of each month and was called misoka-soba. It was a special meal, celebrating good health for living another month.
Hot soba is served in a special deep bowl filled with broth and selected ingredients. You don't need a spoon to drink the broth, as everyone is expected to drink directly from the bowl. Soba bowls have a particular shape. The rim of the bowl is slightly deformed outwards, making it very comfortable in the mouth. This serie is a range of table bowls in rustic colors and good size.
